Make-ahead game plan

  • 2–3 days before: make the cherry tomato confit and carrot cayenne hot sauce; start the ice cream base and freeze the assembled sandwiches.
  • The night before: brew the iced tea, quick-pickle the carrots, mix the burger patties, make the galette dough, bake the blueberry cake and the pavlova meringue.
  • The morning of: char the corn and toss the orzo salad, build the green bean and cabbage salads, bake the galettes, roast the carrots, batch the drinks (hold the ice).
  • When it’s go time: grill the burgers and fish, toast the crostini, warm the meatballs, assemble the pavlova, and pour.
