Now, if you haven’t heard of cucamelons, they’re these adorable tiny fruits that taste like a cross between a cucumber and a lime, and they make this mojito absolutely delightful.

Cucamelon Mojito with Fresh Mint and Lime

A refreshing twist on the classic mojito using garden-fresh cucamelons (or cucumber) muddled with mint, lime, and white rum. Bright, fizzy, and impossibly refreshing on a hot summer day.

Ingredients

Mojito

  • 1012 fresh mint leaves
  • 1 lime, cut into wedges
  • 12 tablespoons sugar, or to taste
  • 1/2 cup cucamelons, halved (or substitute with 1/2 cucumber, chopped)
  • 1 1/2 ounces white rum
  • 1/2 cup club soda
  • Ice

Instructions

Muddle the Base

  1. In a sturdy glass or cocktail shaker, add the mint leaves, one lime wedge, and sugar. Muddle gently but firmly — press and twist with the muddler until you can smell the mint oils and the lime has released its juice. Don’t pulverize the mint; just bruise it enough to release the flavor.
  2. Add the halved cucamelons (or chopped cucumber) and muddle again, pressing just enough to crack them open and release their juice. The mixture should smell bright and citrusy.

Build the Cocktail

  1. Fill the glass almost to the top with ice. Pour the white rum over the ice.
  2. Top with club soda and give it one gentle stir with a bar spoon or straw — just enough to combine without killing the fizz. The drink should be sparkling and cloudy with flecks of mint.

Garnish and Serve

  1. Squeeze an extra lime wedge over the top and drop it in. Garnish with a sprig of fresh mint and a few whole cucamelons on a cocktail pick if you’re feeling fancy. Serve immediately while the fizz is still lively.

Notes

  • Cucamelon substitute: If cucamelons aren’t available, half a Persian cucumber chopped small gives a similar cool, refreshing flavor. English cucumber works too — just avoid the waxy-skinned varieties.
  • Make it a pitcher: Multiply the recipe by 6-8 and muddle everything in a pitcher. Add the rum and refrigerate for up to 2 hours. Add ice and club soda just before serving so it stays fizzy.
  • Mocktail version: Skip the rum and add an extra splash of club soda. The cucamelon, mint, and lime are so flavorful that it stands beautifully on its own.
