About This Recipe:
As I step into my garden, I’m greeted by the ripe, fragrant strawberries. Nearby, my chamomile flowers are in full bloom. It’s this natural bounty that inspired me to create my “Strawberry Chamomile Cloud” cocktail. First, I muddle a couple of freshly picked strawberries at the bottom of my cocktail shaker. Then, I pour in a generous splash of gin, the spirit’s botanical notes pair well with my garden-fresh ingredients. A shot of Saint Germain joins the mix, lending its beautifully light, floral, and subtly sweet character. The fresh lemon juice I squeeze in next brings a burst of citrusy brightness, balancing out the sweetness with its tart edge. The key ingredient is the addition of homemade chamomile simple syrup. The syrup imparts a soothing, floral note.
Lastly, I add an egg white for the silky texture and froth. I give everything a vigorous shake without ice first, then add ice for a second shake. This ‘dry shake’ method ensures the egg white is well emulsified. Strain the cocktail into a chilled coupe glass, the egg white forming a creamy layer of foam on top. For the finishing touch, I garnish it with a slice of strawberry and a few of my chamomile flowers.
And there it is, my “Strawberry Chamomile Cloud” cocktail. It’s like sipping on summer in a glass, with the taste and aroma of the garden coming through in each sip.

Ingredients
- 2 oz Gin
- 1 oz Saint Germain (Elderflower liqueur)
- 1 oz Fresh lemon juice
- 1 oz Chamomile Simple Syrup (recipes follow)
- 2 Fresh strawberries
- 1 Egg white
- Dried chamomile flowers or fresh chamomile flowers for garnish
- Strawberry slice for garnish
Chamomile Simple Syrup with Dried Chamomile Flowers:
- 1 cup Sugar
- 1 cup Water
- 1/2 cup Dried chamomile flowers or 2–3 chamomile tea bags
Instructions
Chamomile Simple Syrup Directions:
- In a small saucepan, combine sugar and water.
- Heat over medium heat until the sugar dissolves completely.
- Once the sugar has dissolved, add the dried chamomile flowers or the chamomile tea bags and remove from heat.
- Let the mixture steep for at least 30 minutes, or up to several hours for a stronger chamomile flavor.
- Strain the syrup into a jar, pressing the flowers or tea bags to extract all the flavors. Dispose of the used flowers or tea bags.
- Store the syrup in a sealed container in the refrigerator.
Cocktail Directions:
- Muddle the strawberries in the bottom of a cocktail shaker.
- Add the gin, Saint Germain, lemon juice, chamomile simple syrup, and egg white.
- Dry shake (without ice) vigorously for about 10-15 seconds to emulsify the egg white.
- Add ice and shake again until well-chilled.
- Double strain into a chilled coupe or martini glass.
- Garnish with a strawberry slice and chamomile flowers. Enjoy!
