Why this recipe
This is the pitcher that lives in my fridge all summer. Mint iced tea, cooling and barely sweet, made with mint from the garden that is frankly trying to take over the garden. It is the drink I reach for after an afternoon of weeding, the one I pour for anyone who stops by, the thing that makes a hot day feel manageable. And it could not be simpler to make.
The version I landed on brews everything in one pot. No separate mint syrup, no extra steps, no second pan to wash. You steep the tea and a big handful of mint together, stir the honey straight into the hot tea so it dissolves completely, then strain and chill.
Make it the night before and let it chill, and it is ready when you are. If you grow mint, this is the recipe that finally justifies how aggressively it spreads.
What makes this work
Sweeten while hot. Honey dissolves completely in hot tea and disappears. Try to sweeten cold tea and you get a clumpy layer at the bottom of the glass. Stir it in right after you pull the tea bags, while everything is still steaming.
Ingredient highlights
Fresh mint (1 big bunch, plus sprigs to garnish). The soul of the drink. Spearmint is the classic choice and the most cooling. Peppermint works too but is sharper, so use a little less. If you grow your own, snip it just before making the tea for the brightest flavor. Green tea (4 to 6 bags). Use what you love. Green tea is lighter and grassier and plays especially well with the cucumber. For a caffeine-free version, use rooibos or a herbal blend.
English cucumber (1). Thin-skinned and nearly seedless, so no need to peel. Slice it into thin rounds on a bias. A garden cucumber works too, just scoop the seeds if they are large.
Lemon (2). A squeeze of fresh lemon juice brightens everything and balances the sweetness. Add it to taste.

A cooling cucumber mint iced tea brewed in one pot, sweetened with mint right in the tea. Make-ahead, garden-fresh, and endlessly refreshing all summer.
Ingredients
- 4 to 6 black or green tea bags
- 6 cups water
- ½ cup honey, or to taste
- 1 big bunch fresh mint, plus sprigs to garnish
- 1 English cucumber, thinly sliced
- Juice of 2 lemons
- Ice
Instructions
- Bring 6 cups of water to a boil, then remove from the heat. Add the tea bags and a generous handful of mint and steep 4 to 5 minutes, pulling the tea bags at 5 minutes. Leave the mint a few minutes longer for a stronger mint flavor.
- While the tea is still hot, stir in the sugar until fully dissolved. Strain out the mint.
- Stir in the lemon juice. Cool, then chill.
- Serve over ice with cucumber slices and fresh mint sprigs added just before serving.
